  • 200g flour

  • 50g butter

  • 5g white sesame
  • 30g white sugar
  • 1/4 teaspoon salt 


  • Put in the mixing bowl 1 chicken egg + 4gr yeast + 30gr sugar + 70ml fresh milk without sugar. Wear nylon gloves and proceed to mix these ingredients thoroughly. 
  • When the above mixtures are mixed, add 200g of flour + 1/4 teaspoon of salt to squeeze into a flexible mass and avoid lumps.
  • Knead the dough into a uniform form. Using the wrist tendons, press firmly and push the dough away
  • Knead the dough continuously for 5 minutes. Then, you add 50g of Da Lat butter and continue to knead until the butter melts. Knead for about 20 minutes until the dough is chewy, soft and no longer sticks to your hands
  • After kneading the finished dough, put it in a bowl and cover it with plastic wrap and let it rest for about 1 hour.
  • At the end of the incubation time, you take that part of the dough out, continue to knead the dough and then divide it into small pieces to eat.
  • You can shape the cake to your liking. Chill for about 30 minutes before you start baking
  • After 30 minutes of incubation. Use a brush to brush a layer of fresh milk without sugar on the surface of the cake. Sprinkle some white sesame on top
  • Put the cake into the tray, arrange it neatly and then bake the cake at a temperature of 160 degrees C for 10 minutes to evenly brown the cake.

1.2 Melted Chocolate Cocoa Cake


  • 200g flour
  • 3g banking soda
  • 55g Butter
  • 60g pure cocoa powder
  • 80ml cooking oil
  • 150g white sugar
  • 3g salt
  • 10 chocolates

  • Prepare a bowl, pour 200g of flour + 3g of salt + 3g of baking soda powder and put on plastic gloves and mix this mixture well.
  • Make a mixture of 80ml of cooking oil + 55gr of unsalted butter + 150gr of white sugar + 60gr of cocoa powder + 1 egg (with the yolk) then proceed to mix these mixtures

  • Divide the mixture into equal portions, roll into a circle with plastic gloves
  • With your hand, flatten the dough down. Place the chocolate ball in the center and roll it up. Let the dough cover the chocolate. Continue until all the dough and chocolate are prepared
  • Put the cake neatly on the tray and put it in it to bake. Bake for about 10 minutes at 190 degrees Celsius

1.3 Mochi Cake with Cocoa Cream


  • 90g sweetened condensed milk
  • 220ml fresh milk without sugar
  • 100g Whipping Cream
  • 25g pure cocoa powder
  • 150g glutinous rice flour
  • 50g cornstarch
  • 2 tablespoons cooking oil


  • Add 10g of cocoa powder + 60g of condensed milk + 100g of Whipping Cream. Mix these 3 mixtures well, avoiding lumps
  • Put the above 3 mixtures in a blender. Blend for 3-4 minutes to thicken the cream. After that, pour it into the ice tray and put it in the freezer
  • Put the pot on the stove. Add 220ml of unsweetened milk + 30g of condensed milk + 2 tablespoons of cooking oil. Turn off the heat to low, stir well so that the milk is dissolved and warm, then turn off the heat
  • Pour the milk mixture into 150g of glutinous rice flour. Use filter, filter until smooth. After the mixture is smooth, bring it to steam for about 10 minutes until the mixture is clear
  • Put the mixture on a cutting board, sprinkle with 50g cornstarch to let the crust cool quickly
  • After the mixture cools. Knead the dough evenly into soft dough balls. Divide the dough into 2 parts. 1 part stuffed with gr cocoa powder about 5 minutes to color
  • Divide the dough into equal parts. Use a rolling pin to flatten the dough, then put the frozen cream into each part of the dough and pack it into a shape

2. Dishes from cocoa powder for the elderly

2.1 Baked Cocoa Oatmeal Banana Cake


  • 100g Oatmeal
  • 10g pure cocoa powder
  • 1 teaspoon baking powder
  • 3 ripe bananas
  • 20ml honey
  • 2 eggs with yolks
  • 60ml fresh milk without sugar


  • Peel 2 bananas. Put it in a bowl and use a spoon to slowly mash it
  • Crack 2 eggs + 60ml unsweetened fresh milk + 20ml honey. Stir these mixtures well until they blend together

2.2 Cocoa Yogurt Cake 


  • 1 box of sweetened yogurt
  • 4 eggs (yolk only)
  • 3ml vanilla
  • 80g flour number 8
  • 15g cocoa powder
  • 40g cooking oil
  • 90g sugar
  • 1/2 teaspoon tartar powder


  • Put 100gr of sweetened yogurt + 40gr of cooking oil + 80gr of flour + 15gr of cocoa powder + 4 egg yolks + 3ml of vanilla essence into a large bowl. Mix these ingredients well together
  • Leftover egg white, you add 1/2 teaspoon of tartar powder + 90g of sugar and use a whisk to beat well until the eggs are stiff, then stop.
  • Spoon 1/2 teaspoon of the egg white mixture into the original cocoa mixture. Continue using the mixer to beat the eggs together
  • Prepare the cake mold, apply cooking oil evenly. Then, slowly pour the mixture into 2/3 of the cake pan. Use a toothpick to stir in a spiral so that there are no air bubbles left on the cake
  • Put the cake in the oven at 150 degrees Celsius and bake for 40 minutes to finish

  • 100g pure cocoa powder
  • 230g glutinous rice flour
  • 50g cornstarch
  • 210g sweetened condensed milk
  • 40g sugar
  • 2g white salt


  • Put 210g of sweetened condensed milk in a bowl. Put it in the microwave to heat the milk for 40 minutes
  • For 100g of cocoa powder, sifted finely. Use a spatula to mix until the dough is smooth, forming a ball
  • Roll the chocolate thinly, then cover it with cling film. Store the chocolate in the refrigerator for about 30 minutes
  • Put in a new bowl with 230g glutinous rice flour + 40g sugar + 2g salt + 300ml hot water. Mix well until the dough is smooth
  • Cover the bowl with a lid and steam it in the microwave for about 2 minutes. After 2 minutes, remove the dough, continue to stir well and then steam for another 3 minutes. The purpose of this is to help the dough cook evenly from the inside out
  • Pour the dough into the mortar and let it cool. Use a pestle to pound the dough continuously until it reaches a tough consistency
  • Spread the cake dough on a cutting board, use a knife to cut the cake dough and chocolate into equal parts
