- Check the roots: Amaranth has very strong roots. Choose vegetables that are easy to not rot, blacken

2.2 How to pick up amaranth with a simple knife
- 1 bunch of amaranth
- Salt (rice water)
- Knife
- Pot

- If you buy amaranth directly from the garden, the roots will stick to the soil. You use a knife, cut off this soiled root
- If you buy chrysanthemum vegetables at the supermarket, the vegetables are already packaged, labeled, … you do not need to cut off the roots of the amaranth.
- Using a knife, cut the edible parts of the young amaranth leaves into the basket
- See yellow leaves, pests, wilted, crushed, … remove them immediately
- Using a knife, cut off the edible tops of the amaranth and put it in a basket
- The stem of amaranth is old, ugly, pests, … you should remove them because when cooking this fibrous body is very hard, not tasty.
- Vegetables have been picked up. You proceed to wash the vegetables several times under gently running water

- Knife
- Wash vegetables
- Vegetable basket

- 1 bunch of amaranth

- Completely remove the old, wilted, yellow, rotten amaranth leaves, … discard
- Wash the amaranth under running water gently to remove dirt
- Mix a pot of dilute salt, put amaranth in and soak for 5 minutes to disinfect and impurities
- Pick up vegetables, rinse vegetables under running water gently. Let the vegetables drain
- Put cooking oil in a pan and bring to a boil
- When the oil is hot, add minced garlic and fry until golden brown and fragrant

- Remove old leaves, yellow leaves, wilted, … discard
